  • 200g fresh pineapple chunks
  • 150g cooked black beans
  • 50g sliced red onion
  • 50g sliced bell pepper
  • 15ml olive oil
  • 10g taco seasoning
  • 6 corn tortillas
  • 1 avocado, sliced
  • 15g fresh cilantro
  • 1 lime, cut into wedges

I start by preheating the oven to 400°F (200°C). On a baking sheet, I toss the pineapple chunks, black beans, red onion, and bell pepper with olive oil and taco seasoning. While the pineapple and black bean mixture is roasting, I heat a skillet over medium heat. I warm the corn tortillas in the skillet for about 30 seconds on each side until they are soft and pliable. Then, I set them aside and keep them warm.

Once the roasted pineapple and black bean mixture is ready, I assemble the tacos. I spoon a generous amount of the mixture onto each warm tortilla. I top the tacos with sliced avocado, fresh cilantro, and a squeeze of lime juice for a burst of freshness.
