  • 50ml soy sauce
  • 30ml rice vinegar
  • 2 sheets of seaweed

  • 1 avocado
  • 10g sesame seeds
  • 2 stalks of green onions
  • 30ml mirin

To start, cook the risotto rice in a saucepan with water until it’s creamy and tender. In a separate rice cooker, prepare the sushi rice following the package instructions, then mix in rice vinegar and soy sauce for that distinctive sushi flavor. Meanwhile, in a small bowl, combine mirin and soy sauce to marinate the seafood mix.

Once the rice is ready, gently fold in the seafood mix and diced avocado to the risotto, creating a luxurious and savory base. Cut the seaweed sheets into thin strips and mix them into the sushi rice for a pop of umami flavor. Serve the risotto in individual bowls, topping each with a dollop of wasabi, pickled ginger, and sliced green onions. Finish off with a sprinkle of sesame seeds for a crunchy texture.
