Ingredients:

  • 1 medium cauliflower head
  • 10g smoked paprika
  • 5g sumac
  • 15ml pomegranate molasses
  • 20g toasted pine nuts
  • a handful of fresh parsley, chopped
  • 30ml olive oil
  • Salt and pepper, to taste

  • Cutting board
  • Baking sheet
  • Mixing bowl
  • Brush
  • Oven

To start, preheat your oven to 200°C (400°F). Trim the leaves and stem from the cauliflower, then slice it vertically into 1-inch thick steaks. Place the cauliflower steaks on a baking sheet.

In a small mixing bowl, combine the smoked paprika, sumac, pomegranate molasses, olive oil, salt, and pepper. Brush this mixture generously over both sides of the cauliflower steaks, ensuring they are well coated with the flavorful marinade.

Roast the cauliflower in the preheated oven for 25-30 minutes, or until tender and golden brown. While the cauliflower is roasting, toast the pine nuts in a dry pan until fragrant and lightly browned.

Once the cauliflower steaks are done, remove them from the oven and sprinkle with the toasted pine nuts and fresh parsley. Drizzle any remaining marinade over the top for an extra burst of flavor.
