For this recipe, you will need the following ingredients:

To make this flavorful dish, start by cutting 300g of firm tofu into bite-sized cubes and patting them dry with a paper towel to remove excess moisture. In a small bowl, whisk together 2 tablespoons of white miso paste, 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of maple syrup, and a pinch of red pepper flakes.

Heat a wok over medium heat and add a splash of sesame oil. Add the tofu cubes to the wok and cook until they are golden brown and crispy on all sides. Remove the tofu from the wok and set it aside.

In the same wok, add a bit more sesame oil and sauté 1 diced onion, 2 minced cloves of garlic, and a handful of chopped fresh rosemary until the onions are soft and fragrant. Add in a mix of your favorite stir-fry vegetables (such as bell peppers, snap peas, and mushrooms) and cook until they are tender-crisp.

Return the tofu to the wok and pour the miso sauce over the tofu and vegetables. Stir everything together until the sauce is evenly distributed and heated through. Serve the stir-fry over steamed brown rice or quinoa and garnish with additional fresh rosemary.
