Ingredients:

  • Japanese eggplant (300g)
  • Soba noodles (200g)
  • Shiitake mushrooms (150g)
  • Soy sauce (50ml)
  • Mirin (30ml)
  • Sesame oil (15ml)
  • Green onions (50g)
  • Sesame seeds for garnish

To start, thinly slice the Japanese eggplant and shiitake mushrooms. In a wok over medium heat, add the sesame oil and sauté the eggplant until it starts to soften. Then, add in the shiitake mushrooms and continue to cook until they are golden brown.

Next, add the soy sauce and mirin to the wok, allowing the flavors to meld together. In the meantime, cook the soba noodles according to the package instructions until al dente. Drain the noodles and add them to the wok, tossing everything together to combine.

Finally, top the dish with chopped green onions and a sprinkle of sesame seeds for a burst of freshness and crunch. Serve the umami eggplant noodles hot and enjoy the flavorful combination of ingredients.
