Ingredients:

  • 250g shrimp, peeled and deveined
  • 400ml coconut milk
  • 1 tsp chili flakes
  • 2 cloves of garlic, minced
  • 200g linguine pasta
  • 1 red bell pepper, thinly sliced
  • Fresh cilantro, chopped for garnish

Kitchen Tools:

  • wooden spoon
  • knife

To start, cook the linguine pasta according to the package instructions until al dente. In a saucepan, heat the coconut milk over medium heat until it simmers. Add the minced garlic and chili flakes, stirring to combine. Allow the flavors to meld together for a few minutes.

Meanwhile, in a skillet, heat some oil over medium heat. Add the shrimp and sauté until they turn pink and opaque, about 2-3 minutes per side. Once cooked, remove the shrimp from the skillet and set them aside.

Next, add the sliced red bell pepper to the skillet and sauté until slightly softened. Return the cooked shrimp to the skillet and pour the coconut milk mixture over the shrimp and peppers. Stir everything together and let it simmer for a few minutes to thicken the sauce.

Finally, add the cooked linguine to the skillet and toss everything together until the pasta is well coated in the creamy coconut sauce. Serve the Spicy Coconut Shrimp Pasta hot, garnished with fresh cilantro for a pop of freshness.
