Today, I wanted to share a recipe that combines flavors I never thought would go so well together. The combination of sweet apples, earthy sage, and savory chicken creates a unique and delicious dish that is perfect for any occasion.

Ingredients:

  • boneless, skinless chicken breasts (250g)
  • farfalle pasta (200g)
  • apples, diced (2 medium)
  • fresh sage leaves, chopped (10g)
  • onion, finely chopped (1 small)
  • garlic, minced (2 cloves)
  • chicken broth (250ml)
  • heavy cream (100ml)
  • butter (30g)
  • olive oil (15ml)
  • salt and pepper to taste

To start, season the chicken breasts with salt and pepper, then chop them into bite-sized pieces. In a large skillet, heat the olive oil over medium heat and cook the chicken until browned and cooked through. Remove the chicken from the skillet and set it aside.

In the same skillet, melt the butter and sauté the onions until they are translucent. Add the garlic and cook for another minute until fragrant. Stir in the chopped sage leaves and diced apples, cooking until the apples are slightly softened.

Next, add the chicken broth and heavy cream to the skillet, stirring to combine. Let the mixture simmer for a few minutes to allow the flavors to meld together. Meanwhile, cook the farfalle pasta according to the package instructions until al dente.

Once the sauce has thickened slightly, add the cooked chicken back to the skillet and stir to combine. Season with salt and pepper to taste.

Serve the apple sage chicken mixture over the cooked farfalle pasta, garnishing with additional chopped sage leaves if desired. This dish pairs well with a crisp white wine or a side salad for a complete meal.
