Ingredients:

  • 3 yellow bell peppers
  • 1 cup cooked quinoa
  • 1/2 cup canned pineapple chunks
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 green onions, thinly sliced
  • 2 tbsp chopped peanuts
  • 1/2 tsp red pepper flakes
