  • 6 dried figs
  • 50g pistachios
  • 2 sprigs of fresh rosemary
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

In a small bowl, mix together chopped dried figs, crushed pistachios, chopped rosemary leaves, honey, balsamic vinegar, and a drizzle of olive oil. Season with salt and pepper. Spoon this mixture onto one half of each chicken breast, then fold the other half over the stuffing.
