The combination of savory and sweet flavors in this dish is perfect for a summer barbecue or a cozy night in. Let me guide you through the process of creating this delicious meal.

Ingredients:

  • 500g ground lamb
  • 50g breadcrumbs
  • 10g cumin
  • 10g coriander
  • 5g salt
  • 5g pepper
  • 1 fresh pineapple, diced
  • 1 red onion, finely chopped
  • Handful of fresh cilantro, chopped
  • Juice of 1 lime

To start, preheat your oven to 180°C. In a mixing bowl, combine the ground lamb, breadcrumbs, cumin, coriander, salt, and pepper. Mix everything together until well combined, then shape the mixture into golf ball-sized meatballs. Place the meatballs on a baking sheet and bake in the preheated oven for 20-25 minutes, or until cooked through.

While the meatballs are baking, prepare the pineapple salsa. In a skillet, sauté the diced pineapple and chopped red onion until caramelized. Remove from heat and stir in the fresh cilantro and lime juice.

Once the meatballs are done, serve them hot with the pineapple salsa on top. The juicy sweetness of the salsa pairs perfectly with the spiced lamb meatballs, creating a flavor explosion in every bite.
