Lately, I’ve been craving a comforting casserole that’s a bit out of the ordinary. I wanted something hearty and flavorful but with a unique twist. Today, I’m excited to share my recipe for Sweet Potato and Chorizo Casserole, a dish that perfectly combines sweet, smoky, and spicy flavors into one delicious bite.

To start, gather the following ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 200g chorizo sausage, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 cup of shredded cheddar cheese
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Make sure you have these essential kitchen tools on hand:

Start by preheating your oven to 375°F (190°C). In a skillet over medium heat, cook the sliced chorizo until it’s browned and crispy. Remove the chorizo from the skillet and set it aside. In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are soft and fragrant.

Next, in a large mixing bowl, combine the cooked chorizo, sautéed vegetables, cubed sweet potatoes, black beans, corn, cumin, smoked paprika, salt, and pepper. Mix everything together until well combined. Transfer the mixture to a greased baking dish and top it with shredded cheddar cheese.

Cover the baking dish with foil and bake the casserole in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

Once the casserole is done baking, remove it from the oven and let it cool slightly. Garnish with fresh cilantro before serving.
