Today, I’m excited to share a comforting and flavorful autumn recipe that’s perfect for cozy weeknight dinners or gatherings with friends. This Spiced Butternut Squash and Bacon Pasta combines sweet and savory flavors with a hint of spice for a dish that will surely impress your taste buds.

For this recipe, you’ll need the following ingredients:

  • butternut squash (500g, peeled and diced)
  • bacon (200g, chopped)
  • onion (1, finely chopped)
  • garlic cloves (2, minced)
  • dried sage (1 tsp)
  • chili flakes (1/2 tsp)
  • pasta of your choice (400g)
  • heavy cream (200ml)
  • parmesan cheese (50g, grated)
  • salt and pepper to taste

To make this delicious dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • large pot
  • wooden spoon

Start by cooking the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set it aside, leaving the bacon fat in the pan. In the same skillet, add the chopped onion and cook until translucent. Add the minced garlic, diced butternut squash, dried sage, and chili flakes. Cook until the squash is tender.

While the squash is cooking, boil water in a large pot and cook the pasta according to the package instructions. Reserve a cup of pasta water before draining. Once the squash is tender, add the heavy cream and grated parmesan cheese to the skillet. Stir until the sauce is creamy and well combined.

Add the cooked pasta to the skillet and toss everything together, adding a bit of the reserved pasta water if needed to loosen the sauce. Season with salt and pepper to taste. Serve the Spiced Butternut Squash and Bacon Pasta with the crispy bacon on top.

This dish weighs approximately 1500g once cooked and serves 6 people. Each serving is about 250g and contains approximately 400 calories.

A clever tip for this recipe is to roast the butternut squash in the oven before adding it to the skillet for an extra depth of flavor. Simply toss the diced squash with olive oil, salt, and pepper, and roast at 400°F (200°C) for 20-25 minutes until caramelized.
