As the weather starts to cool down, I find myself craving comforting dishes that are perfect for cozy nights in. That’s why I’m sharing this delicious caramelized onion and blue cheese quiche recipe with you today. The combination of sweet caramelized onions and tangy blue cheese creates a flavor explosion that’s hard to resist.

Ingredients:

  • 1 pre-made pie crust
  • 2 onions, thinly sliced
  • 100g of blue cheese, crumbled
  • 4 eggs
  • 200ml of heavy cream
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 tablespoons of olive oil

Kitchen Tools:

  • pie dish
  • mixing bowl
  • whisk

To start, preheat your oven to 375°F (190°C). In a frying pan, heat olive oil over medium heat and add the sliced onions. Cook the onions, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

While the onions are cooking, blind bake the pie crust according to the package instructions. Once the crust is baked, remove it from the oven and set it aside to cool slightly.

In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined. Spread the caramelized onions evenly over the bottom of the pie crust, then sprinkle the crumbled blue cheese on top. Pour the egg mixture over the onions and cheese.

Place the quiche in the oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown. Allow the quiche to cool slightly before slicing and serving.

The total weight of the cooked quiche is approximately 800g. This recipe makes 6 servings, with each serving weighing around 133g. Each serving has an estimated calorie count of 300 calories.

One clever tip for this quiche is to sprinkle a little extra blue cheese on top before baking for an added burst of flavor and a beautiful presentation.
