Today’s Delight: Cheesy Spinach Stuffed Portobello Mushrooms

I am excited to share with you my latest creation, perfect for a cozy night in or a special occasion. These Cheesy Spinach Stuffed Portobello Mushrooms are a delightful combination of savory flavors and hearty textures that will surely impress your taste buds.

Ingredients:

Start by preheating your oven to 375°F (190°C). Clean the portobello mushrooms by gently wiping them with a damp paper towel. Remove the stems and scoop out the gills to create a hollow center for the stuffing.

In a sauté pan, heat olive oil over medium heat and cook the diced onion until translucent. Add minced garlic and sauté for another minute. Add fresh spinach and cook until wilted. Season with salt and pepper to taste.

In a bowl, combine the cooked spinach mixture with crumbled feta cheese and shredded mozzarella. Mix well until evenly distributed. Spoon the filling into the prepared portobello mushrooms, ensuring they are generously filled. Top each mushroom with breadcrumbs for a crispy finish.

Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
