Savory Fusion Recipe: Lasagna Enchiladas with a Twist

To start, gather your ingredients:
– 250g ground beef
– 1 onion, diced
– 1 bell pepper, chopped
– 2 cloves of garlic, minced
– 1 can of diced tomatoes
– 1 can of black beans, drained and rinsed
– 1 tablespoon chili powder
– 1 teaspoon cumin
– 1 teaspoon oregano
– 6 corn tortillas
– 1 cup ricotta cheese
– 1 cup shredded cheddar cheese

Start by preheating your oven to 350°F (180°C). In a skillet over medium heat, brown the ground beef with the onion, bell pepper, and garlic until the meat is cooked through. Add the diced tomatoes, black beans, chili powder, cumin, and oregano, and simmer for 10 minutes.

In a baking dish, layer three corn tortillas on the bottom. Spread half of the meat mixture over the tortillas, followed by half of the ricotta cheese and half of the cheddar cheese. Repeat the layers with the remaining ingredients.

Bake the lasagna enchiladas in the preheated oven for 30 minutes, or until the cheese is melted and bubbly. Remove from the oven and let it cool for a few minutes before serving.

The total weight of the cooked dish is approximately 1200g, with 6 servings. Each serving weighs around 200g, and has an estimated calorie count of 400 per serving.
