Ingredients:

  • boneless chicken thighs (500g)
  • mango (1, diced)
  • red bell pepper (1, sliced)
  • red onion (1, sliced)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • garlic powder (1 tsp)
  • salt (1 tsp)
  • pepper (1/2 tsp)
  • olive oil (2 tbsp)

To start, season the chicken thighs with curry powder, garlic powder, salt, and pepper. In a skillet over medium heat, add olive oil and sear the chicken until browned on both sides. Remove the chicken from the skillet and set aside.

In the same skillet, add the sliced red bell pepper and red onion. Cook until they start to soften, then add the diced mango. Pour in the coconut milk and stir until everything is well combined. Place the chicken back into the skillet, cover, and let simmer for 15-20 minutes until the chicken is cooked through.

Once the chicken is cooked, remove it from the skillet and let the sauce simmer for a few more minutes to thicken. Serve the chicken topped with the mango and coconut milk sauce, and enjoy the sweet and savory flavors melding together in every bite.
