Today’s Special: Spicy Peach and Bacon Empanadas

Hey there, foodies! Today, I’m excited to share a unique and delicious recipe that combines the sweetness of ripe peaches with the savory saltiness of crispy bacon in a spicy empanada filling. This dish is perfect for a summer evening get-together or a cozy night in. Let’s get cooking!

Ingredients:

  • 2 large ripe peaches, diced
  • 6 strips of bacon, chopped
  • 1 tsp red chili flakes
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 store-bought pie crust

Kitchen Tools:

  • cutting board
  • knife
  • frying pan
  • mixing bowl
  • rolling pin
  • baking sheet

Start by preheating your oven to 375°F (190°C). In a frying pan over medium heat, cook the chopped bacon until crispy. Remove the bacon from the pan and set aside on a paper towel to drain the excess grease.

In the same pan, add the diced peaches, red chili flakes, brown sugar, salt, and cinnamon. Cook for about 5 minutes until the peaches are slightly softened and caramelized. Add the crispy bacon back to the pan and stir to combine. Remove from heat and let the filling cool slightly.

Roll out the store-bought pie crust on a lightly floured surface. Using a round cutter or a glass, cut out small circles of dough. Place a spoonful of the peach and bacon filling in the center of each circle. Fold the dough over the filling to create half-moon shapes, then crimp the edges with a fork to seal.

Place the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and flaky.

Once the empanadas are done, remove them from the oven and let them cool for a few minutes before serving. These Spicy Peach and Bacon Empanadas are best enjoyed warm, with a sprinkle of extra red chili flakes on top for an added kick.

The total weight of the cooked dish is approximately 600 grams. This recipe makes 12 empanadas, with each serving weighing around 50 grams. One serving of these empanadas is estimated to be around 200 calories.

A unique tip for this recipe is to add a splash of bourbon to the peach filling for a boozy twist. The alcohol will cook off during baking, leaving behind a rich and flavorful taste.

I hope you give these Spicy Peach and Bacon Empanadas a try and make them your own with any personal touches you like. Enjoy the colorful blend of flavors in every bite! Happy cooking!
