Exploring New Flavors: Tandoori Pineapple Chicken

As the days get hotter and the summer fruits become juicier, I am excited to share with you a recipe that combines the tropical sweetness of pineapple with the bold flavors of tandoori spice. This tandoori pineapple chicken dish is a delightful blend of sweet and savory that will surely wow your taste buds.

For this recipe, you will need the following ingredients:

  • 400g chicken breast
  • 1 ripe pineapple
  • 50g tandoori spice mix
  • 150g yogurt
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lemon, juiced
  • Salt, to taste
  • Fresh cilantro, for garnish

To prepare this dish, you will need the following kitchen tools:

  • grill pan
  • mixing bowl
  • sharp knife
  • cutting board
  • tongs

Start by cutting the chicken breast into bite-sized pieces and placing them in a mixing bowl. Add the tandoori spice mix, yogurt, minced garlic, grated ginger, lemon juice, and a pinch of salt. Mix everything together until the chicken is well coated with the marinade. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes.

While the chicken is marinating, prepare the pineapple. Cut the pineapple into chunks, removing the skin and core. Thread the pineapple chunks onto skewers.

Heat a grill pan over medium heat. Place the chicken pieces on the grill pan and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

At the same time, grill the pineapple skewers for about 5 minutes, turning them to ensure even charring.

Once the chicken and pineapple are cooked, remove them from the grill. Serve the tandoori pineapple chicken hot, garnished with fresh cilantro.

The approximate total weight of the cooked dish is 700g, with 4 servings. Each serving is approximately 175g. The approximate calorie count per serving is 250 calories.

A clever tip for this dish is to sprinkle a little extra tandoori spice mix over the grilled pineapple for an extra burst of flavor.

I hope you enjoy this unique and delicious tandoori pineapple chicken recipe. Feel free to experiment with different spice blends or add additional vegetables to make it your own. Happy cooking!
