As the fall season approaches, I find myself craving warm and comforting dishes that incorporate seasonal produce in unexpected ways. This recipe combines the earthy sweetness of pumpkin with the bold tanginess of Gorgonzola cheese for a tantalizing flavor experience that will surely impress your taste buds.

Ingredients:

  • 300g pumpkin puree
  • 150g Gorgonzola cheese, crumbled
  • 400g French bread, cubed
  • 3 eggs
  • 400ml milk
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

To start, preheat your oven to 350°F (180°C). In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Add in the pumpkin puree and mix until smooth. Next, carefully fold in the crumbled Gorgonzola cheese and fresh thyme, making sure it’s evenly distributed throughout the mixture. Transfer the bread pudding mixture into a greased baking dish and spread it out evenly.
