To start, preheat your oven to 375°F (190°C). Remove the stems from the portobello mushrooms and gently scrape out the gills to create a hollow center. In a mixing bowl, combine the canned pumpkin puree, breadcrumbs, minced garlic, chopped sage, Parmesan cheese, salt, and pepper. Mix until well combined.

Next, spoon the pumpkin mixture into each mushroom cap, pressing down gently to pack it in. Place the stuffed mushrooms on a baking sheet and drizzle with a little olive oil. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
