Savory Pumpkin and Caramelized Onion Galette

Ingredients:

  • 300g pumpkin puree
  • 200g caramelized onions
  • 100g goat cheese
  • 1 tbsp fresh thyme
  • 200g flour
  • 150g cold butter
  • 50ml cold water
  • 1 tsp salt
  • 1/2 tsp pepper

Start by preheating your oven to 375°F (190°C). In a mixing bowl, combine the flour and salt. Cut the cold butter into small cubes and add it to the flour mixture. On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer the dough to a baking sheet lined with parchment paper. Spread the pumpkin puree over the center of the dough, leaving a border around the edge. Top the pumpkin with the caramelized onions, crumbled goat cheese, and fresh thyme. Season with salt and pepper.

Fold the edges of the dough over the filling, pleating as you go to create a rustic galette shape. Brush the edges of the dough with a beaten egg for a golden finish. Bake the galette in the preheated oven for 30-35 minutes, or until the crust is golden brown.
