Today’s Unique Creation: Pumpkin Spice Thai Curry Soup

As the fall season kicks in and the temperatures start to drop, I find myself craving warm, comforting dishes that pack a punch of flavor. That’s why I’m excited to share my latest creation with you today: Pumpkin Spice Thai Curry Soup. This dish combines the cozy flavors of pumpkin spice with the bold and aromatic spices of Thai curry for a truly unique and delicious experience.

Ingredients:

  • 400g pumpkin puree
  • 1 can (400ml) coconut milk
  • 2 tbsp red curry paste
  • 500ml vegetable broth
  • 1 thumb-sized piece of ginger, grated
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 lime, juiced
  • Fresh cilantro, for garnish

To start, heat a saucepan over medium heat and add the diced onion. Cook until translucent, then add the minced garlic and grated ginger. Stir in the red curry paste and let it cook for a minute to release its flavors. Pour in the vegetable broth and coconut milk, then add the pumpkin puree. Stir well to combine all the ingredients and bring the soup to a simmer.

Let the soup simmer for about 15 minutes to allow the flavors to meld together. Then, using an immersion blender, blend the soup until smooth and creamy. Squeeze in the lime juice for a burst of freshness and stir it in. Taste the soup and adjust the seasoning with salt and pepper as needed.

Serve the Pumpkin Spice Thai Curry Soup hot, garnished with fresh cilantro for a pop of color and flavor. This soup is perfect for cozy nights in or for impressing guests with its unique combination of flavors.
