These savory spinach and artichoke stuffed mushrooms are a delightful twist on a classic appetizer, combining earthy mushrooms with creamy filling and a hint of tangy artichoke. Let’s get cooking!

Ingredients:

  • 10 large cremini mushrooms
  • 100g baby spinach
  • 200g canned artichoke hearts
  • 100g cream cheese
  • 50g shredded mozzarella cheese
  • 2 cloves of garlic
  • 1/2 lemon, juiced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Start by preheating your oven to 375°F (190°C). Clean the mushrooms, remove the stems, and carefully scoop out any excess gills to create a hollow space for the filling. Chop the mushroom stems finely and set aside.

In a sauté pan over medium heat, heat olive oil and add minced garlic. Cook until fragrant, then add chopped mushroom stems and baby spinach. Sauté until the spinach is wilted. Drain and roughly chop the canned artichoke hearts and add them to the pan. Cook for an additional 2-3 minutes.

In a mixing bowl, combine cream cheese, shredded mozzarella, lemon juice, salt, and pepper. Add the sautéed spinach, mushroom, and artichoke mixture to the bowl and mix well to combine.

Fill each mushroom cap generously with the filling mixture and place them on a baking sheet. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are cooked through and the filling is bubbly and golden on top.

Once out of the oven, let the stuffed mushrooms cool slightly before serving. These savory spinach and artichoke stuffed mushrooms are best enjoyed warm and are sure to be a hit with your family and friends.
