That’s why I’m excited to share my latest creation with you today: Blueberry Bacon Pancakes. This unique twist on a classic breakfast dish will surely become a new favorite in your household.

Ingredients:

  • 150g fresh blueberries
  • 100g crispy cooked bacon, crumbled
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 300ml milk
  • 1 egg
  • 50g melted butter

To start, combine the flour, baking powder, sugar, and salt in a mixing bowl. In a separate bowl, whisk together the milk, egg, and melted butter. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the blueberries and crumbled bacon, being careful not to overmix.

Heat a frying pan over medium heat and lightly grease with butter or cooking spray. Pour a ladleful of batter onto the pan for each pancake, cooking until bubbles form on the surface. Flip and cook for another minute or until golden brown.
