This creation was inspired by a recent trip to a local farmers’ market where I found the most beautiful heirloom tomatoes and fresh rosemary. Let’s dive into this delicious culinary experience!

Ingredients

  • heirloom tomatoes (500g)
  • chickpeas, drained and rinsed (400g)
  • feta cheese, crumbled (150g)
  • fresh rosemary, chopped (2 tbsp)
  • honey (2 tbsp)
  • balsamic vinegar (3 tbsp)
  • olive oil (4 tbsp)
  • salt and pepper to taste

Preparation

I start by preheating the oven to 200°C (400°F). While the oven is heating up, I slice the heirloom tomatoes into thick rounds and place them on a baking sheet. In a small bowl, I combine the olive oil, balsamic vinegar, honey, and fresh rosemary, whisking everything together until well combined.

Next, I drizzle the olive oil mixture over the sliced tomatoes and chickpeas on the baking sheet, ensuring everything is evenly coated. I sprinkle some salt and pepper over the top before placing the baking sheet in the oven.

I roast the tomatoes and chickpeas for about 25-30 minutes until the tomatoes are tender and slightly caramelized. Once out of the oven, I sprinkle the crumbled feta cheese over the top for a creamy and tangy finish.

Serving

The total weight of this flavorful dish is approximately 1050g, making around 4 servings. Each serving is about 262.5g, and you can expect each serving to be around 300 calories.

One tip to elevate this dish is to garnish it with a drizzle of extra balsamic vinegar right before serving for an extra burst of flavor.
