Seasonal Galette Recipe: Smoky Plum and Bacon

I am thrilled to share with you today a recipe for a Smoky Plum and Bacon Galette that is inspired by the changing of the seasons. The sweet and juicy plums paired with the savory richness of the bacon create a unique and delicious flavor combination that is perfect for this time of year.

Ingredients:

  • 300g of fresh plums, pitted and sliced
  • 100g of smoked bacon, chopped
  • 200g of all-purpose flour
  • 100g of cold butter, diced
  • 1 egg
  • 1 tablespoon of honey
  • Salt and pepper to taste

Preparation:

Start by preheating your oven to 375°F (190°C). In a mixing bowl, combine the flour, cold diced butter, and a pinch of salt. Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs. Add in the egg and mix until the dough comes together. Wrap the dough in plastic wrap and let it chill in the fridge for 30 minutes.

In the meantime, cook the chopped bacon in a skillet until crispy. Remove from the heat and set aside to cool.

Once the dough has chilled, roll it out on a floured surface into a circle about 12 inches in diameter. Transfer the dough to a baking sheet lined with parchment paper.

Arrange the sliced plums and bacon on top of the dough, leaving a border around the edges. Drizzle the honey over the plums and bacon, then season with salt and pepper.

Fold the edges of the dough over the filling, creating a rustic edge. Brush the edges of the galette with a beaten egg for a golden finish.

Bake the galette in the preheated oven for 25-30 minutes, or until the crust is golden brown and the plums are softened.

Serving:

Once the galette is baked to perfection, remove it from the oven and let it cool slightly. Serve slices of the Smoky Plum and Bacon Galette warm, topped with a dollop of whipped cream or a scoop of vanilla ice cream for a truly decadent treat.
