Seasonal Quinoa Delight: A Healthy and Flavorful Recipe to Wow

Today, I’m excited to share a brand new recipe that I recently created in my kitchen. This dish is perfect for those looking for a healthy yet delicious meal that’s packed full of flavor. I was inspired by the changing seasons and wanted to create something light and satisfying to enjoy with family and friends.

For this recipe, you’ll need the following ingredients:
– 250g quinoa
– 1 large sweet potato, diced
– 1 red bell pepper, sliced
– 1 can of chickpeas, drained and rinsed
– 1/2 cup of dried cranberries
– 2 tbsp of olive oil
– Salt and pepper to taste
– Fresh parsley for garnish

To prepare this dish, you’ll need the following kitchen tools:

  • Saucepan
  • Baking sheet
  • Knife
  • Spatula

Start by cooking the quinoa according to the package instructions in a saucepan. While the quinoa is cooking, preheat your oven to 400°F (200°C). On a baking sheet, toss the diced sweet potato, sliced red bell pepper, and chickpeas with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes until the vegetables are tender and slightly caramelized.

Once the quinoa is cooked and the vegetables are roasted, combine them in a large bowl along with dried cranberries. Mix well and season with additional salt and pepper if needed. Serve the quinoa and vegetable mixture garnished with fresh parsley.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving is around 300g, and you can expect each serving to be approximately 350 calories.

One unique tip for this dish is to add a squeeze of lemon juice before serving. The citrusy flavor adds a refreshing twist to the dish and enhances all the other flavors.
