  • 500g lamb shoulder, diced
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 100g dried apricots
  • 1 cinnamon stick
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp ground ginger
  • 500ml chicken broth
  • 2 tbsp olive oil

To begin, heat olive oil in your tagine pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Next, add the diced lamb shoulder and brown on all sides, allowing the meat to develop a rich caramelized crust.

Once the lamb is browned, add the dried apricots, cinnamon stick, ground cumin, coriander, and ginger. Season generously with salt and pepper, stirring everything together to coat the lamb in the fragrant spices.

Pour in the chicken broth, stirring to combine all the ingredients. Bring the mixture to a gentle simmer, then cover the tagine pot with its lid. Reduce the heat to low and let the tagine simmer for 1.5 to 2 hours, allowing the flavors to meld and the lamb to become tender and succulent.

Check the tagine occasionally, giving it a stir and adding more broth if needed to keep the dish moist. The meat should be fork-tender and the apricots plump and juicy when the tagine is ready.

Once the lamb is cooked to perfection, remove the cinnamon stick and discard. Taste the tagine and adjust seasoning if necessary. Serve the aromatic Moroccan lamb tagine hot, garnished with fresh cilantro and a sprinkle of toasted almonds for an added crunch.

This dish weighs approximately 1400g once cooked, serving 4 to 6 people. Each serving comes in at around 350g, providing a hearty and satisfying meal packed with around 500 calories.
