Ingredients:

  • 400g medium shrimp (peeled and deveined)
  • 1 ripe mango (diced)
  • 1/2 red onion (thinly sliced)
  • 1 jalapeno (seeded and diced)
  • 1 lime (juiced)
  • 1/4 cup cilantro (chopped)
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 small tortillas

Start by heating olive oil in a skillet over medium heat. Add the shrimp and season with cumin, cayenne pepper, garlic powder, salt, and pepper. Cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the diced mango, red onion, jalapeno, and lime juice. Cook for 2-3 minutes until the onions are translucent and the mango is slightly caramelized. Return the cooked shrimp to the skillet and toss everything together. Remove from heat and stir in chopped cilantro.

To assemble the tacos, warm the tortillas in a dry skillet for a few seconds on each side. Spoon the spicy shrimp and mango mixture onto each tortilla and serve hot. Feel free to add a squeeze of lime juice or a dollop of sour cream on top for extra flavor.
