Sizzling Fusion Recipe: Sweet & Spicy Pineapple Chicken Stir-Fry

Today’s Special: Spicy Pineapple Chicken Stir-Fry

Growing up in a multicultural household, I’ve always been a fan of fusion cuisine. Today, I’m excited to share a recipe that combines the sweetness of pineapple with the heat of spicy peppers in a delicious stir-fry. This dish is perfect for a quick weeknight dinner or a festive weekend meal.

Ingredients:

  • boneless, skinless chicken breast (250g)
  • fresh pineapple (200g)
  • red bell pepper (1)
  • green onion (2 stalks)
  • soy sauce (30ml)
  • sriracha sauce (15ml)
  • rice vinegar (15ml)
  • brown sugar (15g)
  • ginger (10g)
  • garlic (2 cloves)
  • vegetable oil
  • cornstarch (10g)

Kitchen Tools:

  • wok
  • chopping board
  • knife
  • measuring cups
  • measuring spoons

To begin, heat some vegetable oil in a wok over medium-high heat. Add the minced garlic and ginger, stirring until fragrant. Toss in the cubed chicken breast and cook until no longer pink.

Next, add the diced pineapple, sliced red bell pepper, and chopped green onion to the wok. Stir-fry for a few minutes until the vegetables are slightly tender, but still crisp.

In a small bowl, mix together the soy sauce, sriracha sauce, rice vinegar, and brown sugar. Pour this sauce over the chicken and vegetables in the wok, stirring to coat everything evenly.

In a separate bowl, combine cornstarch with a bit of water to make a slurry. Pour this mixture into the wok and stir well to thicken the sauce.

Once everything is heated through and well-coated with the sauce, remove the wok from the heat. Serve the spicy pineapple chicken stir-fry over steamed rice or noodles for a complete meal bursting with flavor.

The total weight of the cooked dish is approximately 700g, with 4 servings. Each serving is around 175g, with an approximate calorie count of 300 per serving.

A clever tip to make this dish even more flavorful is to marinate the chicken in a mixture of soy sauce, ginger, and garlic for at least 30 minutes before cooking. This will infuse the meat with extra taste.
