Today’s Special: Spicy Mango Shrimp Stir-Fry

One of my favorite things to do is experiment in the kitchen, and today I’m excited to share my latest creation with you all – a Spicy Mango Shrimp Stir-Fry! This dish is perfect for summer with its sweet and spicy flavors, and it comes together in no time. Let’s dive into the recipe!

Ingredients:

  • 300g peeled and deveined shrimp
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp honey
  • Juice of 1 lime
  • Fresh coriander for garnish

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • grater
  • tongs

To start, heat your wok over high heat and add a splash of oil. Add in the garlic, ginger, and chili, and stir-fry for a minute until fragrant. Next, add in the shrimp and cook until they turn pink and opaque. Remove the shrimp from the wok and set aside.

In the same wok, add a bit more oil if needed and sauté the onion and bell pepper until they start to soften. Add the mango and cook for another minute. Return the shrimp to the wok.

In a small bowl, mix together the soy sauce, sriracha, honey, and lime juice. Pour this mixture over the shrimp and mango. Stir well to coat everything in the sauce. Cook for another 2-3 minutes until everything is heated through.

Give the stir-fry a taste and adjust the seasoning if needed. If you like it spicier, add more sriracha. If you prefer it sweeter, add more honey.

Once everything is cooked and seasoned to your liking, remove the wok from the heat. Serve the Spicy Mango Shrimp Stir-Fry hot, garnished with fresh coriander on top. Enjoy!

Clever Tip:

To add an extra burst of freshness to this dish, try adding a handful of chopped mint leaves right before serving. The mint will complement the spicy and sweet flavors perfectly!

I hope you give this Spicy Mango Shrimp Stir-Fry a try and get creative with your own twist on it. Feel free to mix in your favorite veggies or adjust the spice level to suit your taste. Happy cooking!
