Ingredients:

  • 500g chicken breast (diced)
  • 1 large mango (peeled and cubed)
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 3 cloves garlic (minced)
  • 1 onion (diced)
  • 1-inch ginger (grated)
  • 1 chili pepper (chopped)
  • 2 tbsp lime juice

To start, heat up a large skillet over medium heat and add a splash of oil. Sauté the diced chicken until golden brown, then remove it from the pan and set it aside. In the same skillet, add the diced onion, minced garlic, grated ginger, and chopped chili pepper. Cook until fragrant.

Next, add the curry powder to the skillet and stir to coat the aromatics. Pour in the coconut milk and stir until well combined. Add the diced mango and lime juice, then season with salt and pepper to taste. Let the mixture simmer for about 10 minutes until the mango is soft and the flavors have melded together.

Once the sauce has thickened slightly, return the cooked chicken to the skillet and stir to coat it in the creamy curry sauce. Let it simmer for another 5-10 minutes to allow the flavors to come together.

Serve the Mango Coconut Curry Chicken hot, garnished with freshly chopped cilantro. Pair it with steamed rice or naan bread for a complete and satisfying meal.
