Sizzling Sweet & Spicy Mango Chicken Stir-fry: A Flavor Explosion!

Introducing: Spicy Mango Chicken Stir-fry

Today, I am excited to share a recipe that combines two of my favorite flavors: sweet mango and spicy chili. This spicy mango chicken stir-fry is perfect for adding a kick to your weeknight dinner routine. The blend of sweet and spicy flavors will leave your taste buds wanting more!

Ingredients:

  • 400g chicken breast (diced)
  • 1 large mango (peeled and cubed)
  • 1 red bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • salt and pepper to taste

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • garlic press
  • grater

To start, heat the vegetable oil in a wok over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant. Next, add the diced chicken breast and cook until browned on all sides.

Once the chicken is cooked through, add the sliced onion and bell pepper to the wok. Stir-fry for a few minutes until the vegetables are tender-crisp. In a small bowl, mix together the soy sauce, chili paste, hoisin sauce, and rice vinegar. Pour this sauce over the chicken and vegetables in the wok.

In a separate bowl, mix the cornstarch with a tablespoon of water to create a slurry. Add the cornstarch slurry to the wok to thicken the sauce. Toss in the cubed mango and stir-fry until everything is well coated and heated through. Season with salt and pepper to taste.

Serve the spicy mango chicken stir-fry hot over steamed rice or noodles. The combination of sweet mango, spicy chili, and savory chicken is sure to be a hit at your dinner table!

This dish weighs approximately 1200g after cooking and serves 4. Each serving is around 300g and has an estimated calorie count of 350.

One clever tip for this recipe is to add a handful of cashews or peanuts for extra crunch and texture. The nuts complement the flavors in the dish and add a delightful contrast to each bite.
