Ingredients:

  • 500 ml heavy cream
  • 250 ml whole milk
  • 200 g brown sugar
  • 2 tbsp cinnamon
  • 6 egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt

To start, pour the heavy cream and whole milk into a saucepan over medium heat. Add in the brown sugar, cinnamon, and salt, stirring until the sugar is fully dissolved and the mixture is heated through.

In a separate mixing bowl, whisk together the egg yolks until smooth. Slowly pour a ladleful of the warm cream mixture into the yolks, whisking constantly to temper the eggs. Gradually incorporate the rest of the cream into the yolks.

Pour the combined mixture back into the saucepan and cook over low heat, stirring continuously until the mixture thickens enough to coat the back of a spoon. Remove from heat and mix in the vanilla extract. Strain the mixture through a mesh strainer to remove any lumps or bits.

Chill the custard mixture in the refrigerator for at least 4 hours or overnight to allow the flavors to meld and intensify. Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.

Once the ice cream has set in the freezer for a few hours, scoop out a generous serving into a bowl or cone.
