Ginger-Spiced Carrot Soup

Today, I’m excited to share a cozy and comforting recipe for ginger-spiced carrot soup. As the weather starts to cool down, there’s nothing better than a warm bowl of soup to satisfy your soul. This vibrant and flavorful soup is perfect for autumn days when you crave something hearty and nutritious.

Ingredients:

  • 500g carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2-inch piece of ginger, peeled and minced
  • 400ml coconut milk
  • 1 liter vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Kitchen Tools:

  • immersion blender

To start, heat olive oil in a large pot over medium heat. Add chopped onions and minced ginger, sautéing until fragrant. Next, add in the chopped carrots and cook for a few minutes until they start to soften. Sprinkle in ground cumin, coriander, and turmeric, stirring to coat the vegetables.

Pour in the vegetable broth and bring the mixture to a simmer. Cook for about 20-25 minutes, or until the carrots are tender. Once cooked, stir in coconut milk and season with salt and pepper.

Using an immersion blender, puree the soup until smooth and creamy. If you prefer a thinner consistency, you can add more vegetable broth or water to reach your desired thickness. Adjust the seasoning as needed.

Serve the ginger-spiced carrot soup hot, garnished with a drizzle of coconut milk and a sprinkle of fresh cilantro. This soup pairs well with crusty bread or a simple green salad for a complete meal.
