The rich aromas and vibrant colors of the exotic spices sparked my creativity, leading me to create a fusion dish that combines the best of two culinary worlds. Join me in the kitchen as we explore new tastes and flavors together!

Ingredients:

  • boneless, skinless chicken thighs (400g)
  • coconut milk (200ml)
  • curry powder (15g)
  • cinnamon stick
  • lemongrass (2 stalks)
  • fresh ginger (50g)
  • star anise (2 pods)
  • brown sugar (30g)
  • lime leaves (4 leaves)
  • jasmine rice (300g)

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • grater

To begin, heat some oil in a large skillet over medium heat. Add the diced chicken thighs and brown them on all sides. Once they’re cooked through, stir in the coconut milk, curry powder, cinnamon stick, lemongrass, grated ginger, star anise, brown sugar, and lime leaves. Let the flavors meld together as the dish simmers for about 20 minutes.

In the meantime, prepare the jasmine rice according to package instructions. Fluff it up with a fork and set it aside.

Once the chicken is tender and the sauce has thickened, it’s time to serve. Spoon the fragrant chicken curry over a mound of fluffy jasmine rice, garnishing with fresh cilantro leaves and a squeeze of lime juice for a burst of citrusy brightness.
