Spice Up Fall Dining with Spicy Apple & Bacon Stuffed Pork Tender

Inspired by the changing seasons and the crisp fall air, I wanted to create a dish that combines unexpected flavors and textures. The Recipe: Spicy Apple and Bacon Stuffed Pork Tenderloin

For this dish, you will need the following ingredients:

  • 1 pork tenderloin (about 500g)
  • 2 apples, diced
  • 4 slices of bacon, chopped
  • 1 jalapeno, seeds removed and diced
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp maple syrup

Before you begin, make sure you have the following kitchen tools on hand:

  • chef’s knife
  • cutting board
  • skillet
  • oven
  • meat thermometer

To start, preheat your oven to 375°F (190°C). Using a sharp chef’s knife, butterfly the pork tenderloin by slicing it lengthwise, but not cutting all the way through. Flatten the tenderloin with a meat mallet until it’s an even thickness.

In a skillet over medium heat, cook the chopped bacon until crispy. Add the diced apples, jalapeno, cinnamon, salt, and pepper, cooking until the apples are tender. Remove from heat and stir in the maple syrup.

Spread the bacon and apple mixture evenly over the butterflied pork tenderloin. Roll up the tenderloin and secure with cooking twine. Place the stuffed pork on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

Once cooked, let the pork rest for 5 minutes before slicing. Serve the spicy apple and bacon stuffed pork tenderloin with your favorite side dishes for a truly unforgettable meal.

For an extra burst of flavor, try brushing the stuffed pork tenderloin with a mixture of melted butter, honey, and a pinch of cayenne pepper before roasting.
