Today’s Culinary Experiment: Spicy Pineapple Pork Tacos

As the weather warms up, I find myself craving light and refreshing dishes with a bit of a kick. That’s why I’m excited to share my latest creation with you today: Spicy Pineapple Pork Tacos. This unique twist on traditional tacos combines sweet and spicy flavors for a truly unforgettable taste experience.

For this recipe, you will need the following ingredients:

  • pork shoulder (cubed) – 500g
  • pineapple (diced) – 300g
  • red onion (sliced) – 1 medium
  • jalapeno (sliced) – 1
  • garlic (minced) – 3 cloves
  • lime (juiced) – 1
  • cumin – 1 tsp
  • paprika – 1 tsp
  • cilantro (chopped) – for garnish
  • corn tortillas – 10

Be sure to have the following kitchen tools on hand:

  • skillet
  • tongs
  • knife
  • cutting board
  • wooden spoon

Start by heating a skillet over medium-high heat. Add the cubed pork shoulder and cook until browned on all sides, about 5 minutes. Next, add the diced pineapple, sliced red onion, sliced jalapeno, and minced garlic to the skillet. Stir in the cumin and paprika for a burst of flavor.

Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Squeeze in the juice of one lime for a tangy twist. The pork should be tender and juicy, and the pineapple should be caramelized.

While the pork mixture is simmering, warm the corn tortillas in a separate skillet. Once warm and slightly charred, fill each tortilla with a generous scoop of the spicy pineapple pork mixture. Top with chopped cilantro for a fresh finish.

This recipe yields approximately 10 tacos, with each serving weighing around 150g. Each serving is estimated to be around 300 calories. One unusual tip to enhance the flavor of these tacos is to sprinkle a pinch of chili powder on top before serving for an extra kick.
