Today’s Recipe: Curried Chickpea Stuffed Peppers

I’m excited to share this unique and flavorful recipe for Curried Chickpea Stuffed Peppers with you today. This dish is perfect for a cozy evening at home or a casual dinner with friends. The combination of curry spices, chickpeas, and sweet bell peppers creates a delicious and healthy meal that will satisfy your taste buds.

Ingredients:

  • 4 medium bell peppers
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (400ml) coconut milk
  • 1 cup cooked rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Kitchen Tools:

  • knife
  • cutting board
  • skillet
  • spatula
  • oven
  • baking dish

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened. Add the curry powder, turmeric, cumin, and coriander, and cook for another minute until fragrant.

Next, add the chickpeas and coconut milk to the skillet. Stir to combine, and let the mixture simmer for about 10 minutes until slightly thickened. Add the cooked rice and mix well. Season with salt and pepper to taste.

Spoon the chickpea mixture into the prepared bell peppers, filling them to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the stuffed peppers are cooked, remove them from the oven and let them cool slightly before serving. The aroma of the curry spices and the creamy coconut milk will make your kitchen smell amazing.

This recipe makes 4 servings, with each stuffed pepper weighing approximately 300 grams. One serving of Curried Chickpea Stuffed Peppers is approximately 350 calories.

One clever tip for this dish is to sprinkle some chopped fresh cilantro or a squeeze of lime juice on top before serving. It will add a burst of freshness and brightness to the rich curry flavors.

I hope you enjoy making and eating these Curried Chickpea Stuffed Peppers as much as I do. Feel free to play around with the spices, add some chopped veggies, or even top them with a dollop of yogurt. Make it your own and savor every bite. Happy cooking!
