Curried Chickpea Stuffed Bell Peppers

Today, I’m excited to share a unique and flavorful recipe for curried chickpea stuffed bell peppers. This dish combines the warmth of curry spices with the sweetness of bell peppers for a satisfying and healthy vegetarian meal. It’s perfect for a cozy night in or for entertaining guests with something a little unexpected.

Ingredients:

  • 4 large bell peppers
  • 400g cooked chickpeas
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 tbsp curry powder
  • 200ml coconut milk
  • 100g fresh spinach, chopped
  • 200g cooked quinoa
  • to taste

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish and set aside.

In a large skillet over medium heat, sauté the diced onion and minced garlic until fragrant. Add the curry powder and stir for a minute to toast the spices. Pour in the coconut milk and cooked chickpeas, and simmer for 5 minutes.

Next, add the chopped spinach and cooked quinoa to the skillet, stirring until everything is well combined. Season with salt and pepper to taste.

Spoon the curried chickpea mixture into the prepared bell peppers, filling them to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender.

Once cooked, remove the dish from the oven and let it cool slightly before serving. These curried chickpea stuffed bell peppers are delicious on their own or paired with a side salad for a complete meal.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs around 300g, with an estimated calorie count of 350 per serving.

Clever Tip:

For an extra kick of flavor, sprinkle some chopped fresh cilantro or a squeeze of lemon juice over the stuffed bell peppers before serving. This will brighten up the dish and add a burst of freshness.
