Moroccan-Inspired Chimichurri Lamb Chops

Today, I’m excited to share with you my unique twist on a classic Moroccan dish inspired by the vibrant flavors of North Africa. This recipe is perfect for a cozy dinner with loved ones or a special occasion when you want to impress your guests with something different and delicious.

Ingredients:

  • lamb chops (4 pieces)
  • fresh mint leaves (50g)
  • fresh parsley leaves (50g)
  • lemon zest (1 lemon)
  • garlic cloves (2)
  • olive oil (100ml)
  • red wine vinegar (50ml)
  • ground cumin (1 tsp)
  • smoked paprika (1 tsp)
  • salt and pepper to taste

Kitchen Tools:

  • grill
  • food processor
  • zester
  • mixing bowl

To start, preheat your grill to medium-high heat. In a food processor, combine the mint leaves, parsley leaves, lemon zest, garlic cloves, olive oil, red wine vinegar, ground cumin, smoked paprika, salt, and pepper. Pulse until you have a chunky paste, adjusting the seasoning to your taste.

Season the lamb chops with salt and pepper on both sides, then generously brush the chimichurri sauce over each chop, ensuring they are evenly coated. Allow the lamb chops to marinate for at least 30 minutes to let the flavors infuse.

Once the grill is hot, place the lamb chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or longer depending on your desired level of doneness.

Remove the lamb chops from the grill and let them rest for a couple of minutes before serving. Drizzle any remaining chimichurri sauce over the chops for an extra burst of flavor.

The total weight of the cooked dish is approximately 600g, serving 4 people with an average weight of 150g per serving. Each serving is estimated to have around 350 calories.

A clever tip for this recipe is to save some of the chimichurri sauce aside after marinating the lamb chops and use it as a dipping sauce for extra flavor.
