Moroccan-Inspired Quinoa Stuffed Bell Peppers

Today, I’m excited to share a unique and flavorful recipe for Moroccan-inspired quinoa stuffed bell peppers. This dish brings together the warm spices of Morocco with the freshness of bell peppers, creating a healthy and satisfying meal that is perfect for any occasion.

Ingredients:

  • 4 large red bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 cup dried apricots, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • to taste

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from inside.

In a large saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, then add the minced garlic, cumin, coriander, and cinnamon. Cook for another minute until fragrant.

Add the quinoa, vegetable broth, chopped dried apricots, and chickpeas to the saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes, until the quinoa is cooked and the mixture has thickened.

Remove the saucepan from heat and stir in lemon juice, fresh parsley, salt, and black pepper. Divide the quinoa mixture evenly among the hollowed-out bell peppers, pressing down gently to pack it in.

Place the stuffed bell peppers in a baking dish and cover with foil. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.

Once cooked, remove from the oven and let cool slightly before serving. Enjoy these delicious Moroccan-inspired quinoa stuffed bell peppers as a flavorful and nutritious meal!
