As the weather warms up and I start craving light and refreshing dishes, I decided to experiment in the kitchen and came up with a unique fusion recipe that combines the flavors of spicy sushi and the convenience of a burrito. These Spicy Sushi Burritos are a fun twist on traditional sushi rolls, perfect for a quick lunch or a picnic in the park.

Ingredients:

  • 200g sushi rice
  • 4 sheets nori
  • 50ml sushi vinegar
  • 1 avocado, sliced
  • 50g spicy mayo
  • 30g sriracha
  • 1 cucumber, julienned
  • 1 carrot, shredded
  • 150g cooked shrimp
  • 10g sesame seeds

Kitchen Tools:

  • rice cooker
  • bamboo rolling mat
  • sharp knife
  • cutting board

Start by cooking the sushi rice according to the package instructions, then stir in the sushi vinegar to season. Lay a sheet of nori on a bamboo rolling mat, then spread a thin layer of sushi rice on top, leaving about an inch of space at the top.

Layer the avocado, spicy mayo, sriracha, cucumber, carrot, cooked shrimp, and sesame seeds in the center of the rice. Carefully roll the burrito tightly using the bamboo mat, sealing the edge with a bit of water.

Once rolled, use a sharp knife to slice the burrito into even pieces. Serve with extra spicy mayo and sriracha for dipping, and enjoy your spicy sushi burritos!

The total weight of the cooked dish is approximately 900g, with 4 servings at around 225g each. Each serving is approximately 350 calories.
