As the weather starts to cool down and the days get shorter, I find comfort in creating warm and satisfying dishes in my kitchen. Today, I’m excited to share a unique recipe that combines the creamy goodness of mac and cheese with the bold flavors of spicy kimchi. This Spicy Kimchi Mac and Cheese is a fusion of two beloved comfort foods that will surely warm you up on a chilly evening.

To start, gather the following ingredients: 250g macaroni pasta, 200g sharp cheddar cheese (grated), 100g mozzarella cheese (shredded), 1 cup kimchi (chopped), 1/2 cup kimchi brine, 1/4 cup butter, 2 tbsp all-purpose flour, 2 cups milk, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper to taste, and chopped green onions for garnish.

For this recipe, you will need the following kitchen tools:

  • large pot
  • colander
  • medium saucepan
  • whisk
  • oven-safe baking dish

Start by cooking the macaroni pasta according to the package instructions in a large pot of salted water. Drain the pasta in a colander and set aside. In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, cooking for a couple of minutes until the mixture turns golden brown. Slowly whisk in the milk until smooth and thickened.

Next, add the grated cheddar cheese, shredded mozzarella cheese, garlic powder, onion powder, salt, and pepper to the saucepan. Stir until the cheeses are melted and the sauce is creamy. Fold in the chopped kimchi and kimchi brine, allowing the flavors to meld together.

Combine the cooked macaroni pasta with the kimchi cheese sauce, stirring until well coated. Transfer the mixture to an oven-safe baking dish and bake in a preheated oven at 350°F (180°C) for about 20 minutes, or until the top is golden and bubbly.

Once the Spicy Kimchi Mac and Cheese is out of the oven, garnish it with chopped green onions for a fresh finish. Serve hot and enjoy the gooey, spicy, and comforting flavors of this unique fusion dish.
