Today, I’m excited to share a vibrant and flavorful vegetarian dish that brings together the sweetness of ripe mangoes with the heat of spicy chili peppers. This Spicy Mango Tofu Stir-Fry is perfect for those days when you’re craving something exotic and exciting to tantalize your taste buds.

Ingredients:

  • 350g firm tofu, cubed
  • 1 large ripe mango, diced
  • 2 bell peppers, sliced
  • 1 red onion, thinly sliced
  • 2 fresh chili peppers, minced
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 3 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • Cooked rice for serving

To start, heat a bit of oil in a wok over medium-high heat. Add the cubed tofu and cook until golden brown and crispy on all sides. Remove the tofu from the wok and set aside.

In the same wok, add a bit more oil and sauté the garlic, ginger, and chili peppers until fragrant. Toss in the sliced bell peppers and red onion, cooking until they begin to soften.

In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and cornstarch. Pour this sauce over the vegetables in the wok and stir to combine. Allow the sauce to thicken slightly before adding the diced mango and cooked tofu back into the wok.

Stir everything together gently to coat the tofu and vegetables in the delicious sauce. Let the mixture simmer for a few minutes to allow the flavors to meld together.

Serve the Spicy Mango Tofu Stir-Fry over a bed of steamed rice and enjoy the perfect balance of sweet and spicy flavors in every bite.
