  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • 1/2 cup shredded cheese (optional)

Before you begin, make sure you have the following kitchen tools ready:

  • baking dish
  • saucepan
  • chef’s knife
  • cutting board
  • mixing spoon

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a saucepan, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened. Stir in the quinoa, vegetable broth, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.

Once the quinoa mixture is ready, spoon it into the hollowed-out bell peppers. If desired, sprinkle shredded cheese on top of each stuffed pepper.

Bake the stuffed bell peppers in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once cooked, remove the stuffed bell peppers from the oven and let them cool slightly before serving.

This recipe yields approximately 4 servings, with each stuffed bell pepper weighing around 300 grams. Each serving is approximately 350 calories.

One unique tip for this dish is to drizzle a little balsamic glaze over the stuffed peppers before serving. The tangy-sweet flavor adds an extra layer of deliciousness to the dish!
