Ingredients:

  • 450g of chicken breast, diced
  • 1 ripe mango, diced
  • 400ml of coconut milk
  • 3 tablespoons of red curry paste
  • 1 bell pepper, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons of lime juice
  • 1 tablespoon of brown sugar
  • to taste
  • Fresh cilantro, chopped, for garnish

To start, heat up a large skillet over medium heat and add the diced chicken breast. Cook until browned on all sides, then remove from the skillet and set aside. In the same skillet, add the diced onion, sliced bell pepper, minced garlic, and grated ginger. Sauté until the vegetables are soft and fragrant.

Next, add the red curry paste to the skillet and cook for another minute to release its flavors. Then, pour in the coconut milk, diced mango, lime juice, brown sugar, salt, and pepper. Stir everything together until well combined.

Return the cooked chicken to the skillet and simmer the curry for about 15-20 minutes until the chicken is cooked through and the flavors have melded together beautifully. Adjust the seasoning to taste with more salt, pepper, or lime juice if needed.

Once ready, serve the Spicy Mango Chicken Curry hot over a bed of steamed white rice or fluffy naan bread. Garnish with fresh chopped cilantro for a burst of freshness.
