  • frozen peas, thawed (100g)
  • toasted cashews, chopped (50g)
  • fresh cilantro, chopped (a handful)
  • lime, juiced (1)
  • olive oil (3 tbsp)
  • salt and pepper to taste

Start by rinsing the quinoa under cold water to remove any bitterness. In a saucepan, combine the quinoa, water, curry powder, cumin, and cinnamon.
