Spice Up Your Snack Game with Curried Chickpea Stuffed

Today’s Healthy Snack Recipe: Curried Chickpea Stuffed Avocado

As the weather starts to warm up, I find myself craving light and refreshing snacks that still pack a punch of flavor. One of my favorite go-to recipes for a healthy and satisfying snack is my Curried Chickpea Stuffed Avocado. It’s a simple yet delicious dish that is perfect for a mid-afternoon pick-me-up or a light lunch.

For this recipe, you will need the following ingredients:

  • canned chickpeas (drained and rinsed) – 200g
  • avocado (halved and pitted) – 2 medium
  • Greek yogurt – 50g
  • curry powder – 1 tsp
  • lemon juice – 1 tbsp
  • salt and pepper – to taste
  • fresh cilantro (chopped) – for garnish

In terms of kitchen tools, you will need:

  • mixing bowl
  • fork
  • spoon
  • knife

Start by mashing the chickpeas in a mixing bowl using a fork until they are slightly chunky. Add in the Greek yogurt, curry powder, lemon juice, salt, and pepper. Mix everything together until well combined.

Next, scoop out a bit of the avocado flesh from each half to create a well for the chickpea mixture. Divide the chickpea mixture evenly between the avocado halves, filling them generously.

To finish, garnish the stuffed avocados with chopped cilantro for a pop of freshness.

The total weight of the cooked dish is approximately 500g, with 2 servings. Each serving weighs around 250g, and has an approximate calorie count of 300 per serving.

One unusual tip for this recipe is to sprinkle a little extra curry powder on top of the stuffed avocados right before serving to enhance the flavors even more.
