Today’s Recipe: Spicy Mango Shrimp Tacos

Hello everyone! Today I’m excited to share my latest creation, Spicy Mango Shrimp Tacos. This dish is perfect for a summer evening with friends and family, bringing together the sweet juiciness of mango with the bold flavors of spicy shrimp. Let’s dive into the recipe!

Ingredients:

  • 500g large shrimp (peeled and deveined)
  • 2 ripe mangoes (diced)
  • 1 red bell pepper (sliced)
  • 1 red onion (thinly sliced)
  • 2 chipotle peppers in adobo sauce (minced)
  • 1 lime (juiced)
  • 3 cloves of garlic (minced)
  • 3 tbsp olive oil
  • 8 corn tortillas
  • Fresh cilantro (chopped)
  • Salt and pepper to taste

To start, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and chipotle peppers, cooking for about a minute until fragrant. Next, add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the red bell pepper and red onion until they begin to soften, about 5 minutes. Add the diced mango to the skillet along with the lime juice, stirring to combine. Let it cook for another 2-3 minutes until the mango is heated through.

Return the cooked shrimp to the skillet, mixing everything together to ensure the flavors meld. Remove from heat and sprinkle with fresh cilantro.

In a separate skillet, heat the corn tortillas until warm and slightly charred.

Serving:

Serve the spicy mango shrimp mixture on top of the warm tortillas, garnishing with additional cilantro if desired. These tacos are best enjoyed immediately, with a squeeze of fresh lime juice on top.
